New Notable Dining in Denver?

I'll soon be in Denver for at least 5 nights. While I'm there frequently enough, I'm wondering if there is anything new in the restaurant scene that I should check out. Eating well is one of my priorities!

My current Denver restaurant go-to list already includes:
Bistro Vendome
Euclid
Fruition
Rioja
Spuntino
Stoic & Genuine
Twelve
Frasca

Food is good at the places on the list I've been but I don't know how to leave not hungry without ordering an app and 3 entrees....

I haven't been yet but Domo is supposed to be where the local chefs eat. Always seems to have a looooong wait....

Root Down may be new to you, very popular but me personally not sure what the fuss is about.

Linger is a good suggestion for what you seem to be looking for. Not sure it's fine dining but you should eat well there...

A good bowl of tonkatsu ramen is at the top of my search list...miss CA!

So, day one was quite successful on the food front.

I'll work back from dinner. Yes, Bistro Vendome was again amazing. But, e-Richie, 5 nights in a row?!?!? No way - I'd be in a French fat/cream/dairy-induced coma after the 3rd night. Again, wonderful meal, once (per trip).

And thanks for the new recommendations so far. Several are on my list to try over the next several days. In return, here is a hearty recommendation for a new place in Denver - Ophelia's Electric Soapbox - Linger's new sister restaurant. Located in an old brick building that used to house a brothel, it has been reworked for its opening just over a month ago into an amazing interior. Very, very cool setup, with live music viewable from 2 floors.

I had brunch there today, so no music, but a very nice back patio in the sun. And excellent dishes. Try it if you are in the area. Between the mortuary and the brothel, the guy clearly has a feel for locale as well as food. (Note the next-door business - lots of tourists taking photos in front of that place.)



I found it rather amusing, being Buddhist myself, that the former brothel and cannabis joint were directly across the street from this place.

Euclid Hall is good late night food. Uncle for Ramen. Wayne's in Superior for BBQ. Lucky Pie is not good IMO.

My wife and I loved Root Down - farm to table type menu with some really innovative cooking. I also thought it was reasonably priced - not cheap, but not over the top expensive.
