What is the typical degree slope of a old school threaded quill stem?
A modern threadless stem is around 83 degrees and it looks that a quill could be more acute angle around 70 degrees and slope down more?

This will affect the height of my handlebars (length of stem notwithstanding)

Some nitto road models are 72' and the Pearl is 71'

The idea is that the forward extension is level,
given the stem angle is the same as the head tube angle.

... so typically to get my handlebar up to the same level as when Im using a threadless stem, I would have to pull the quill up more?

Errm,, threadless doesn't use quills.

You have to have the steerer (on the fork) longer and use spacers under the stem clamp. Or use a stem with a higher 'rise' (angle).

HT lengths are different on each bike - the zank is 2cm longer

also the Zank was being assembled at the time- today my saddle and bars are both a bit lower - like on the DKS- but you get the idea
