It doesn't sound that hard. Disclaimer: I have never been on Mt Ventoux, nor tried to go without a seat for that long. But I have climbed half an hour or so without sitting as part of a longer ride.
As a counter point, here is another Mt Ventoux challenge by a fellow fixed gear rider Paul Rozelle. He went up (and down) Mt Ventoux four different ways on a fixed gear bike.
