120/120 is the front and rear travel in mm for the new Scott Spark.

Typical world cup XC bikes are 100/100, so that's a change. I've also seen a few Olympic bikes posted where the rider took a frame designed for 100/100 and put a 120mm travel fork on it. The newest generation of Fox (SC32) and RockShox (SID) top level cross country forks are light, even at 120mm travel so there's no real weight penalty for having more squish in the front.

On this course, every little bit (and some slack geo and a dropper post) will help. There are some boulder-y rock gardens, some steep rooty descents, and several drops, one of which looks like 3-4 feet to me. Unlike a lot of modern XCO courses, there's no real defining climb on this one. Instead, a bunch of short punchy climbs that add up to something like 200m climbing per 4km lap. This is old and there might have been changes since 2019, but it gives you an idea.

Anyone know how they do team cars for the Olympic Road Race? Clearly not every nation has a car, are they sharing?

Yes - they're sharing. Don't have the specifics, but at one part of the broadcast they mentioned Ecuador and Costa Rica sharing a team car and had a shot of two riders from these nations getting some water.
