What size drill bit for recessed brake nut?

Going to drill a fork originally intended for a nutted brake to swap it to a recessed style fit.

Anyone know offhand what size drill bit is the tool for the job?

I don't, but I'm responding to say that not all recessed nuts are the same OD. Maybe immaterial to you with an older steel fork, but as an example I think Reynolds used a smaller OD nut on their forks.

Reynolds brake nuts are 7.65mm, Standard brake nuts are 8.0mm

A 5/16” bit will get the nut in there.
You may also want need to counterbore the hole after enlarging it.
