Gravel bike fit

How do the pros think about this vs a road fit?

Gravel

Same saddle position as road bike.
Bars ~1cm taller and ~1cm shorter reach.

I remember a post from years back where that was Steve Hampsten's exact advise to someone on setting up their Strade Biache road bike for that type of riding. It may also have involved moving the saddle back and down.

Someone please tell me, in detail, why. What are you achieving other than "feels better."

If you're providing advice I think there should be some reasoning to back up your advice . . . because we're all special snowflakes and your "feel better" is not my "feel better."
