Here are some quick pics of the current build. I wanted to go to 11-speed for parts compatibility with my other bikes and I also wanted a clutch derailleur and bar ends. The GRX rear derailleur is working great so far and the 11-speed bar ends are identical to the 9-speed bar ends except the mounting pods are cut further away to allow more lever throw, and there’s no friction option. IRD 46-30 crank with an 11-32 cassette. I couldn’t find a decently priced 11-34 cassette when I was putting this together and had this 11-32 handy. Pacenti Forza Classico wheels. For the brakes, I wanted more stopping power than I was getting from the cantilevers, more tire clearance than I would get from mini v-brakes (this Atlantis can fit a 29x2.25 mountain bike tire), AND I wanted to keep the brake levers. Also, the brakes had to be silver. I went with Shimano DXR v-brakes and travel agents to deal with the cable pull of the levers. So far, so good. H-bar needs a slight tilt adjustment downward. New saddle, because I‘m always testing new saddles. Route Werks handlebar bag, which has been great so far. I’ve only ridden this configuration a few times and no longer rides, so jury is out but first impressions are good. Still running the GK 43mm tires, although now I’m hankering for some grey Ultradynamicos just to be matchy matchy with the bag. It’s a slippery slope…

Can you elaborate on the bar tape on your chainstay? Make? Color? Source? Looks like an ideal match!

Yes… it’s a great color match. I had it sitting in my box-o-bar tape for years (next to my box-o-stems, box-o-brakes, and box-o-random-9-speed-parts). As best I can remember I’ve only ever bought Newbaum’s cloth bar tape, so I’m guessing this must be their “Celeste”:
