Have you considered shorter cranks to alleviate strikes? I’ve gone down to 170 and as a tall person the justifications for longer cranks don’t seem to be there for me. I am fairly sure I could go down to 165 without noticing it.

100x shorter cranks, especially if you can upgrade from the rather porky and somewhat fugly Force AXS models. Even previous-gen Force 22/1x and Red are highly preferable IMO.

As for your gravel tire height, remember that you have to take into account the inner width of the rim along with the height of the bead wall. So if you're measuring the "height" of the tire from the top of the wall that's a little misleading, since rim walls are generally 4-5mm above the bead seat diameter of 622mm.

I think the best system out there for getting real tire sizing (even though it hasn't been adopted that widely) is the 3T WAM and RAM. And if you go to the column for G-One Bite, it seems like the measurements stack up pretty close to what you have, with the height being a bit off:
