OT: Pellet Grill Cooking: what’s your favorite recipe?
My wife recently won a Louisiana Grills pellet grill from her office. I’ve wanted a pellet grill for a long time, but my unwillingness to spend frivolously on anything other than bikes has meant that I’ve never owned one. We’ve had it for a week and everyone loves it. So far I’ve done steak, burgers, sausages, meatloaf, and pizza. I’m looking for other ideas, recipes, etc. The kids love fish so I’m going to do smoked salmon. I’m also going to experiment with pulled pork as I will eventually have to feed a football team. For those of you that have pellet grills, what are your favorite things to cook, favorite recipes, etc.?

Literally anything and everything are better on a pellet grill.
I make all of the staples—pork butt, porn ribs, chicken quarters… One of my favorite recipes, however, is smoked broccoli. Toss broccoli in olive oil, minced garlic, salt, and pepper. Throw it in a cast-iron pan and cook in the pellet grill. I normally start it early at 225-250 and cook it for half our or so before the protein of the meal goes on the grill, then just let the broccoli finish at whatever temp you’re cooking the rest of the food on. Also, don’t smoke a Turkey for thanksgiving unless you want to be on the hook for one at family dinner every year. It’s unbelievable. |

Okay...what is a pellet grill and what makes it better/desirable? Are we not just trading heat sources or am I likely missing something?

If you can cold smoke on that bricks of cheese are great with a mild smoke. vacuum seal once cool and let sit in the fridge for a few weeks.
Fish needs a very light smoke. I cold smoke tuna with some fruit pellets for about an hour and make tuna salad. Heavy smoke on fish is nasty IMHO. I dont have a pellet smoker but a small Humphrys charcoal smoker but do have a cold smoke basket for it. My friend smokes chuck roast on his. Inject with beef broth and tallow first and heavy flavor smoke for about 4 hours. Best chuck I ever had. |

I have a Traeger grill. One thing I make a lot is beer can chicken. But I don't use an actual beer can, I have a ceramic version like this.
I tried to make pizza but it does not get near hot enough. Just about anything else from fish to meats to vegetables comes out good. |

I use my pellet grill the most for:
Reverse seared filet minions and tri tips Spatchcocked turkey (everybodys favorite for thanksgiving) and whole chickens Pork shoulders (incredibly easy, smoke it at 225 until the thermometer tells you to take it out) Smoking peppers and vegetables for making salsas Burgers and carne asade when using grill grates over an open flame. I have a Yoder which allows you to grill over an open flame with gives the pellet grill a lot of flexibility. For pellets, I have settled on Lumberjack as my favorite. They can be difficult to find in some parts. |

I mostly cook on a Kamado, but a few months ago picked up a table top Pit Boss pellet grill at Target for $125 and really like the convenience of a pellet grill. I've been using Bear Mountain Gourmet Blend pellets which product a really nice smoky flavor. Chicken comes out incredible rubbed with Kinder's Santa Maria rub. FWIW, I tried some Traeger Meat Church blend pellets and didn't care for the smell, flavor at all of course, YMMV.
