I pick a neighborhood that's on a hillside (not hard in Seattle) and a top and bottom (e.g., 70th street and 80th street) and then go to a far point and ride it back like a zipper--up one street, down the next, up the next. I can adjust the difficulty based on the hillside I pick, and enjoy the time by ruthlessly judging the taste of various homeowners.

My favorite bit at Tabor is climbing the paved goat-path from the playground up to the restrooms (I guess that'd be the N/NW side). My least favorite is the eastern approach - chunky pavement just kills momentum and your spirit.

Ok I went up rocky today and it was hard! I haven't done that climb in 20 years and it kicked my butt today.

I have a bike with a 34-36 low gear (that’s right, under 1:1 ratio), which I used liberally today, so I can call a 22-mile, 4200’ elevation ride a ‘recovery’ ride.
