ot: instant pot pressure cooker favorites

I just bought one o these for my birthday present. Do you use one in your kitchen. Got a favorite recipe?

It's my favorite kitchen gadget. I have a ton of recipes, but I really liked some japanese curry I made recently. I pressure cooked some onions and shallots, then pressure cooked some browned lean stew beef, then added back the onion mix with veggies and curry roux (kokumaro is my fav) and simmered (saute function) for 45 min. Just amazing. Top with melty cheese and green onion if you like.

You can make really great soup stocks with it too. And yogurt. And pulled pork, and ribs, and salsa chicken (another fav), etc, etc. I really like that it's programmable too as I often leave it running as a slow cooker when I'm gone.

hard boiled eggs, honey garlic chicken, and as we speak, beef stew in wine.

Wanna do a whole chicken.

TBH, a whole chicken probably won't come out that great, but then again I really like roasting chicken. Gotta have that crispy well seasoned skin. But make your own homemade salsa and throw it in with some check chicken breast and pressure it for 30-45 min and it's delicious and healthy. Serve with tortillas and whatever else you like.

We use ours exclusively to make rice and stock. I'm sure you can make anything in it but I like cooking to much to just throw a bunch of **** in it and waiting 30-45 minutes for the end result...

Echo the use for stock. I can make chicken stock on a weeknight. Usually not able in the traditional way

Subset OT

The zojirushi pressure rice cooker is pretty amazing. Perfect rice (of almost any sort) when you want it to be ready is a good thing. Not quite what the OP was posting about, but in the spirit !
