A SRAM 11 speed crank might work but the chain rings will usually be too large for a cassette that starts with a 10. I use Shimano GRX cranks to get more range and appropriate chain ring sizes. Using 46/30 now.

Yep.

SRAM has one button on each lever. The normal programming is right-click -> smaller cog, left-click -> bigger cog, both-click -> chainring change (or nothing if 1x).

Shimano has two buttons per lever, so you can run a left lever without Di2 if you're running 1x. And the new Di2 is partially wireless, so might work for the travel use-case (battery in seat post is wired to RD, but levers are wireless and use coin-cells for power). But I don't know if any 12s Di2 groups have cable brakes.
