It must be a steep learning curve but it would appear you guys are off to a very good start. It is also refreshing to see a new generation's interpretation of the art of steel bicycles. The best bicycles are built by people who love them. You guys seem on the right track.

Hi!
we only build custom frameset, at our little shop in Milano.
We actually offer 7 models (not officially yet) with different
riding features, and prices go from 1200 eur to 2200 euro.
we born as track builders, for many reasons like geometries studing, build simplicity and also because Mario Camilotto gave us a very important guideline to start. Mario Camilotto was a very important framebuilder in track bikes and stayers. (he learnt at Sante Pogliaghi's shop)
At the moment we also are designing and building some road models thanks to Dario Pegoretti (Giano met Dario at his workshop two years ago) that is very available and enthusiast giving us some tips.
So we are very very lucky, and maybe also for this reason we already have good answers from the people.

frame builder and what tubes

It would be nice if you rode one of their frames to see how you like the ride
Maybe ask if any sold in your area and ask owner if you can ride around the block a few times

The wishbone stays on my 80'sStrawberry frame allowed rear of frame to flex and it would down shift into a lower cog which was not great when going up a hill
It was right at the advent of index shifters which solved that problem
But they do allow more flex

we designed it for crit races:

45mm drop
73.5 ° head tube
76° seat tube
58mm trail

bb shell zone is very rigid to improve the relaunch
(higher than normal due to very reactive geometry and race tilt angles)
we use a butted 0.9mm /0.6mm chainstays 36x16mm
Hss Columbus downtube 50x35mm
Oversize custom wishbone
46mm steerer
