freehub re-engagement after coasting

two different rear wheels seem to have really different re-engagement after coasting characteristics. One re-engages as soon as I start pedaling, the other seems to take a second to "catch up." Is this related to number of pawls and/or number of teeth on the ratchet? Or other factors too. I find the delay to be clunky.

It depends a lot of the hub brands, some like zillion og teeth inside, other ones have like 4, so the way they feel is obviously different.

If the hubs you are comparing are the same brand and model then you might have some sticky FHB pawls, open, check and lube.

Check the one you are concerned if all ok then clearly is a thing of brands. As i said before, some have more pawls than other ones, that affect how the fhb will behave.

An example is DT Swiss ratchet upgrade. Standard DT Swiss rachet has 18 teeth which engages at every 20 degrees of a full turn. You can upgrade to a 54 tooth ratchet which engages at 6 degrees. So the 54 tooth ratchet engages quicker than the standard 18 tooth ratchet.

Could be time for a hub overhaul also.

If you get tired of waiting for engagement get some Onyx hubs.

Before taking it apart pedal one complete revolution backwards/in reverse and count the number of clicks. If you come up with an odd number as apposed to an even number of clicks you likely have a free hub pawl problem. Disassemble and determine if it is a sticking problem or requires repair.

Freehub engagement is mostly a problem for me on mountain bikes. My fatbike takes forever to engage when I'm in a low gear. It's bad enough I'm thinking about getting a new wheel.

The difference between brands is very wide. I'm not sure I am ready to go to an onyx, but it would be nice.
