You would, in the USA. In many states, assaulting a LEO is an automatic felony upgrade from regular misdemeanor assault. And some of those have mandatory minimum sentences that are long enough to ruin your life. At best, you’re out $10k on legal fees and plead down to a misdemeanor. At worst, you roll the dice at trial and end up in jail for a year or more and get labeled a felon for life.
Note that in most of the US, just about any interaction with a LEO can be spun into assault if that LEO or DA feels like it.
