New vs Used
My being new to this (been riding 3-4 years) and not great mechanically...
will used be more of a headache than going new? With a simple google search...these pop up quite a bit: SHIMANO WH-RS500 |

Custom hand-built wheels are great, but tend to offer less value at lower price points. I'd go with Zondas if I were you.

Zondas (which are available with a shimano-compatible freewheel) are a great wheel. I'm looking at these Pacenti pre-builts, which look like a killer deal:

Call Tony at Fairwheel Bikes. He built my wife a very nice wheelset with DT 350 hubs, Kinlin rims, and Sapin spokes for under $500.
