+1 on consumables. Tubes. Bar tape. A spare chain.

It sounds like you already have all the essentials, so rather than a "top essential item", here are a few things you don't realize you haven't got until you need them:

Do you wear sunglasses? If not, consider wearing them for eye protection. One flying stone is all it takes.

How about tools? Do you have a chain wear gauge? A pedal wrench?

Hydration/nutrition stuff? The ultimate consumable.

But +1 to Jaybee's suggestion that you donate to someone who can make better use of it.
