Hard part is finding the cage. Could use a rear der as donor but just use the rear der whole, IMHO

Right. The Skunkworks example was because it was an EPS bike.. but I agree, mechanical shift, just swap the der itself.

How would swapping the cage affect max cog size? That's only affected by the upper part of the RD.
Unless the issue is the overall range of the cassette and chain wrap is the problem.

I have used 10 speed Chorus 13-29 cassette with 48-38-28 TA Zephyr cranks and they worked very well for me and I had no odd gaps between gears. I have a 24 tooth ring in the box but never felt a need to replace the 28----yet. :-)

Am sure a Med cage Potenza Rd is fairly cheap from UK. Why cannibalize a RD, just use a Med cage Potenza with 11's shifters when you use the 11-32. I use med cages for everything....whether I need to or not. No shifting penalty.

Yes....but one can probably buy the whole Med cage Potenza RD cheaper than just a cage. You generally need a med cage for a 11-32. For good chain take up after a front shift, etc. Less likelihood of throwing a chain. And sure....you can maybe make a short cage work, if you mean by working....it gets up on the big cog. But difference between 34-50 and 11-32 is 37 teeth. Too much to expect a short cage to work correctly.
