I would build this frame as an all around rider. It can easily fit 700x28 tires and can do anything you throw at it including mild gravel roads.
It wouldn´t be a time piece for rolling on sunny days. This is a tough bike for tough rides on any weather. Btw it needs some patina to build it´s character.
Chorus 11 w/ cinelli would be my choice. It would rock that pmp post as well.

This. I'd go for a post with setback if you want to be true to the vintage. Plus, they look better on road bikes (IMHO).

But, as we say in the backpacking world, HYOH (Hike Your Own Hike). Here, it would be RYOB (Ride Your Own Bike). It's yours, so it's really all up to you.

On a build like this, the frame is the star. I'd avoid super pimped out components so as not to distract from the artwork.

Personal pref would be a Cinelli 1A, panto or not, matched with your choice of Cinelli bars, both stem and bar polished.

As a vintage guy who rides vintage bikes, I'd select a relatively mainstream component group (for me Dura Ace, but pretty sure you're a Campagnolo guy) so one can cherry pick the nicest examples of each part. With something like Edco Mavic or Sachs you'll be limited to what can be found and if something breaks or wears out, well...

Nice. Wonder why they value it so low. Some of the other Merckx on their site seem more in line with market.

Also, you just won this on eBay? Pretty sweet, was eyeing it myself.
