Except if you are actually going hard and on the drops, it is a better more functional fit.

There are still plenty of jerseys with the higher collars, I don't see an issue here.

Agreed. As someone who has (and really likes) both types of jerseys there is definitely a place for each.

Most of my rides now are in Search and State jerseys, which are supremely comfortable and definitely have a pronounced collar but when getting low on a harder ride, the no collar kits are more comfortable. Our team kits in 2019 and 2020 had the low/no collar front and it definitely makes a difference in comfort when getting low or in the drops. I was always the guy with the zipper down just below my neck on race kit and these eliminate the need to do that so the collar doesn't bunch on you.

That jersey would pair well with a pair of the old carrera faux denim bibs.

Well, I am pretty sure a real pro can show up in sneakers, platform pedals and a skateboarder helmet and drop almost everyone on this forum.

I know I am left like a stone on a hill if not going outright backwards.

I really hate this no collar design, but I guess it helps with the farmer's tan around the neck?
On the flipside, why do all these new jerseys also have sleeves that go down to the elbows? They do the opposite and make for very weird looking tan lines on the arms.

I think the v-collar design makes it easier to create a comfortable garment. One of the major race teams in the area has gone with that style. Offset sleeves and v-collars are two of the only innovations in jersey design since synthetics and three pockets.

I do the same thing and instantly zip-down in any jersey with any type of actual collar. I HATE having the zipper poke me in the throat. It's like being passive-aggressively choked by my own shirt.

As I said previously, aerodynamics. Any weird design decisions you see in skinsuits or jerseys is due to aerodynamics.
