Anyone know if these are in stock anywhere? I can't seem to find one that is shipping now.

Are you asking about the new 12-speed cassette? If so, last I checked the Shimano B2B, there wasn't an ETA in the system for it. I will check again tomorrow.

Exactly - the CS-R7100 12sp in 11-36. I see a number of 11-34 cassettes in stock all over, but no 11-36 in stock anywhere.
