double checking: are Shimano 8100 calipers actually mid-reach 47-57?

This copy would suggest yes but had not heard of a new mid-reach offering till this:

It does say mid-reach but it also says fits 28mm tires which is pretty limiting compared with other mid-reach brakes.

R451's are the mid reach.

Shimano says 8100 reach is 51 so must be mid-reach

51 is not the 57 of mid reach. i bet they bumped it up from 49 to help with clearance with larger tires, but i wouldnt consider this midreach.
having said that, a custom steel builder can place it as to give you clearance for 32s I would bet. believe TK was doing and wouldnt be surprised if our own D Kirk has achieved similar results with short reach shimanos.

Correct. My 6500 calipers are 39-49 and are placed max reach on my custom steel fork. I can clear 28's easily, and 32's max. I have mid-reach Shimano calipers on another bike and they're clearly stamped 45-57mm.

Correct. The only current rim caliper brake with medium (57mm) reach is R451. You will find it at the bottom of this list:
