This might be silly if you don't have trails near you but how about a Marin from this decade? The Team Marin 1 is on sale for $1250 right now and all you'd want to add is a dropper and better tires.

I'd add the following:
A modern mountain bike. I'd go with something in the "downcountry" category. A road bike with tires that are 32+ width. A touring bike. A tandem, depending on your relationship status. |

I'd get rid of some of the road bikes and maybe the old MTB unless it has huge sentimental value and add at least one modern gravel bike and at least one modern MTB. Some kind of tour-y bike sounds like a great idea too, but personally I'd only get that if I actually had time to do a tour, which I don't.
I would only keep old road bikes that had a sentimental value like I won race(s) on them. Unfortunately in my case bikes like that are long gone. If I was really trying to have a versatile quiver I'd have some kind of city bike, cargo bike, or eBike version of the same. Heck I have never even gotten to try a recumbent but if I was really being a collector/quiver person I would be looking at one of those. Basically maximize how many different kinds of cycling experience I can have and how many different kinds of terrain I can have a good time on. One of the reasons I love having a fat bike right now, even though in some ways that bike feels like a mixed bag cause I can't tell if the Q-factor is messing with my back/hips. If it were me, I would add, in order:
1. Disc brake gravel bike that could double as a fendered road bike. 2. Modern full suspension mountain bike (probably in the 120-130 suspension range). 3. Modern road race bike, with disc brakes and the capacity for 32+ tires.
