I believe that you missed one of the main "points" about one-sided road pedals of any cleat type. That is the increased cornering clearance versus even the petite M540 style of two-sided pedal.
The A600 pedals are great with a racing-grade mtb shoe that has good style like the Sidi Dominator imo.
And as bjf pointed out, the A600 pedal spindle assembly lasts several times as long as on the A520's. It's analogous to the huge step up in bearing quality going from the M520 to the M540 pedals.
