Heading there for a family thing over the weekend of the 11th.

Any decent riding? Happy to go road or gravel, typically ride at a B or BB pace. If anyone knows of shop rides, paths, or local routes please weigh in.

the road along the river up to storm king mtn is pretty nice, also mt. beacon and bear mtn.

There's a very nice paved trail that runs from Hopewell Junction (an easy ride from Beacon on Routes 52 & 82) to the Walkway Across the Hudson and then into Ulster County. It's a short ride from the end of the trail to New Paltz. There are some good roads on the west side of the river that get you back to the Newburgh-Beacon Bridge.

Have to agree with Dsteiker you will be treated with some nice mixed surface roads especially Indian brook road and sunken mine road some of our favorite gravel sections in the area, can't go wrong here!!!

this is the one I was going to recommend. There are many variations on this route. I always recommend people in NYC to do it since you can easily train it from there. Beacon is not super far north so you could add a few nice roads in and have a great day on the bike.

I would join but thats my birthday weekend (where I don't actually get to do what I want, which is a nice bike ride ahah)

I've ridden Sunken Mine Rd on 28 mm tires, but it was challenging. Not sure that I'd want to do it both ways, unless the condition of the road has improved:
