My main issue with the sealant is cleaning all the dried out sealant when you want to change the tape or tire. I normally use Orange Seal.
I think I would like to try running without sealant and just carry some Vittoria Pit Stop for small holes and/or a couple worms for anything larger.

My Easton EC90 Aero55 wheels have solid internal rim beds, so no tape, and they have been very reliable over the last 4 years I have owned them.

The downside of rims like these is when a spoke nipple needs to be replaced...but have not had to deal with that.

I've got the Mavic AllRoad UST wheels/tires and like this setup. And the 34mm actual-width UST tires are a very light actual 320g each.
But these tires do not hold air for long without the sealant in there, one airs out in minutes and the other one takes about an hour to lose over half of it's pressure.
Just mentioning this as someone mentioned running tubeless tires without any sealant, I would temper any expectations of such.
