Also, there may be a Profitec in the somewhat near future, so that's something to look forward to . I may have to get a Eureka Mignon when I get a Profitec though, as that'd be similar to feeding a GT vehicle with 87 unleaded

My advice is to go to a shop and watch them. If you go when they are slow, ask the barista for tips. I watched so many videos and never really got it until I went into Intelligentsia in Chicago about 20 years ago and watched the barista pour. I went home and poured a rosetta on first try after that. Or, if you're ever in Monterey, CA hit me up for a stop in at Left Coast Roasting world headquarters for free lessons and all the espresso you can drink! Jon

I now drink cold brew coffee almost exclusively. My preference is an americano, but the acidity was really upsetting my stomach.
I have an Oxo that is very simple, easy to clean, and makes good home cold brew coffee. I usually have a hot cup in the morning and over ice later in the day. It is good for either regular or decaf beans. A batch makes enough concentrate to last me over a week (less if my wife is drinking much). I'll occasionally have an espresso drink and really appreciate that the acidity does add to the overall flavor. But I was at a point where I needed to either almost completely stop drinking coffee or else switch to the cold brew. I'm not ready to give up that beverage quite yet.
