I'm not one to yuck someone's yum but you couldn't pay me to ride 21mm anything.

Yep I love steel and retro bikes but am not interested in anything that won’t clear a 28mm tire.

Honestly cannot tell much of a difference in ride quality, espcially for the cost of the Tufo's
Steal frame definitely helps with the ride quality. Personally I notice a big difference in the quality of tubular tires. Are the Tofu's cheap? I didn't think they were inexpensive. The technology makes sense for building a strong tire that you use a sealant with. They really are amazing in that regard and again my experience with them was in cyclocross and I never flatted one, they are tough. But toughness typically comes at the expense of ride quality.

My mid 2000's Compact can handle the same. Currently running Paris Roubaix on it. 27's I think

The S33's are $35 each. I do a lot of commuting and have numerous bikes with tubular wheels so dropping more than $100 for a tub seems excessive.

I could definitely see using those as commuters. That's what I like about the Conti Sprinters I am using now is I don't need to pump them up all the time.
