Generally, yes, the rear derailleur will shift with the right spacing. But depending on the cassette size and your chainrings, the whole system might not work.

I used an 11-34 Campy 12 cassette briefly, after changing the derailleurs to Force AXS. It worked, but I didn't put but 50 miles on it and didn't spend much time fine tuning the RD.

I also put a SRAM 10-36 on my Campy 12 drivetrain and it worked great.

An early report on weight weenies has the SRAM cassette about 0.5mm longer, overall.

The AXS chain works with a Campy cassette.

It is an 11/34 campy cassette with a record 12 speed 50/34 crankset. The rider has issues shifting the front derailleur. I would just go with eps but the frame is not drilled for it.

The sram axs FD worked perfectly with my Chorus 48/32. The most common mistake is failing to notice that the two alignment marks are not parallel to the big ring, after final tightening of the clamp bolt. Mine usually swing to the outside, so I deliberately set the marks crooked in the opposite direction and watch it move into correct alignment when the clamp bolt is tightened. The plastic tool supplied by SRAM will set the height, IF it sets down far enough over the teeth, but it won't hold the marks in alignment. I don't use it with my Shimano GRX cranks because it doesn't fit over the teeth.

Will Etap play nice with cantilever brakes.

SRAM AXS rim brake levers can be hard to find. They work best with rim brakes like SRAM and Campy that don't require a long pull. I know nothing about the pull required for cantilever brakes, to compare.

Should. The pull with most cantis are similar to road calipers.

eTAP with a Campy 12s cassette and campy 12s chain should work as should 50/34 crank. One of my AXS setups is mechanical brakes, 50/34 and I use 12 speed Shimano 11-34 or Rotor 11-36 or 11-39 with a variety of 10, 11, 12 speed cranks. The Rotor works "ok" while the Shimano is "good". These setups do not shift as well as a pure AXS setup or at least for me but they are perfectly fine for my use.

Brake/shift levers for cable operated brakes are now only listed at the Red level.
