At this point, I'm unclear what's current vs older SRAM stuff. They make both the Force and Red AXS wireless shifters in a 12s wireless, rim brake version. They're both somewhat readily available with some searching, but I expect that'll change someday. That's what I've gone with. Also, obviously, there was a 11s version of Red.

In my view, for a do it all, coupled, travel bike, a 1x12 wireless bike is the best option for simplicity of packing and setup.

I found that the harder it is to pack and assemble, the less likely I was to take the bike along. I've gone to great lengths to simplify this process and 1x12 wireless, with canti brakes, makes this far easier. Remember, you'll likely need to remove your derailleur when packing too. Having no derailleur cable helps lots.
