Don't overlook quill stems for this reason, plus I find 25.4 or 26.0 bars noticeably more complaint than 31.8 bars. I don't have a Rivendell but if I were looking for a long term bike I'd strongly consider one -- the frames look classic but a little upslope on the toptubes is nice too for getting the bars up.
