Deda Zero stem with a flat bar?

I am piecing together a commuter/winter rambler bike. It’s a drop bar frame that should convert easily to flat bar based on the geometry.

I have a 110mm Deda zero stem and want to use a 750mm Simworks flat bar. Is the Deda stem strong enough to use with a wide handlebar? I have a Thomson X4 and notice that the clamp width is much wider on that stem than the Deda.

I am not doing anything crazy on it, but will go off-road a bit. I am a big, tall, heavyish not that strong guy , so there will be some leverage.

I've used light road stems (Kalloy Uno) on MTBs for years. No issues for me-and I am bigger and stronger than most.
