So I bit the bullet and bought the following
34 tooth 11 speed cassette
R8000 GS (long cage) rear derailleur.
New chain
Set the entire thing up, took longer than it should have due to my daughters wanting to help me, but it was fun showing them how to uses torque wrenches, clippers and just hanging out with them.
With the exception of forgetting to remove the spacer, the first time I installed the cassette to check fit, was super easy.
Not sure if the new tension adjuster on the front derailleur is as big of a break through as I told it was, but it was easy to set up.
