The variable offset is intriguing and makes me want to try it for the 55. That said, have been very happy with my Spork 1.0 or whatever they called the first version. Lots of gravel, loaded camping, racks, panniers, fenders. Extra points for being backward compatible with the thru axle endcap for 2.0 that made a standard thru axle possible. I did have to file/machine those endcaps to get racks and fender bolts to clear. They ironed that out with subsequent additions.
Curious about the clearance on this Enve. It seems like these gravel forks are trending toward fat bike territory
