I have a similar project in mind. I plan to put on a Velo Orange Crazy Bar - gives you a bit urban but touring/all-round as well with multiple hand positions. Currently out of stock but coming soon.
My plan for the drivetrain is a 1x11 with either Rapid Fire or thumbshifters, either Microshift or Paul thumbie conversion.
