Probably 34t.
I have an Esker Japhy and its a great bike, I never felt limited on flat terrain. A 34/10 gets you nearly 30mph @ 90rpm - and you could go a bit more if you used an e-13 cassette with a 9t. If you're looking for a longish medium I was thinking about selling mine.
