Yes to the above, but with a small caveat: The drive side spokes on the original 8spd Shamals were a little more outboard than on later 9/10spd Shamals, so if you convert the 8spd Shamals to 9/10spd, the derailleur will be a little closer to the spokes. Because of the angle of the spokes, derailleur clearance on any wheel is dependent on sprocket size, so the smaller the cassette you use on the converted Shamals, the greater the chances you will have of derailleur rub. So, don't use a 12-21 cassette on the converted Shamals, but a 12-25 or larger should be fine.
