Anyone have any good recipes they're cooking lately?

I'm finishing up a 21 day whole food (almost all plant based) diet next week, and excited to start eating some more variety.... AND not fall back into my old bad habits. Some of the whole30 recipes look very good.

I'll start with this one that I've been enjoying.

Cucumber Avocado Salad
1/2 cucumber chopped into bite size pieces
>15 cherry tomatoes
1/4 red onion diced
1 avocado diced
1 tbsp apple cider vinegar
2 tbsp olive oil
salt to taste.

Toss and serve.

I've seen a similar recipe with dill, so it seems like a good base to experiment with some different flavors.

I have a handful of favorites from Shalane Flanagan's Run Fast Eat Slow cookbook.

Tonight I'll be making her Breakfast meets Dinner bowl:

Red or black beans and rice as base
Sauteed spinach
one avocado, diced or sliced
feta cheese
salsa
two fried eggs on top

Doing this from memory...

I strongly recommend the cookbook...and don't make the mistake I did...I bought the Kindle version, then bought hardcopy because its more beautiful and easier...

I agree on that book, i love it...

One of my favorites is the broccoli soup that is in there... well worth making this... tastes creamy and delicious and there is nothing bad in it... to go vegan, just swap out the butter for oil and pass on the chevre... really simple and really good...

Savory oatmeal has been a pretty easy to make staple:

1/3 cup oatmeal
1 cup water
dash of soy sauce
dash of sesame oil

Microwave for 2 minutes

Crack an egg in

Microwave for another minute (makes a softboiled egg)

top with homemade kimchi to taste.

Other additives to make it fancy:
Sesame seeds
white pepper
lightly pan fried tofu

I made a quinoa/lentil/pea/barley salad last week that was pretty good. Modified the "Quinoa salad with dried Persian Lime" recipe from Ottolenghi's "Plenty"

I was low on quinoa but had a package of dried peas, lentils and barley from Whole Foods....I think it was for making a soup. Any dried stuff you like would work. Original recipe called for wild rice...

Anyway....
  • cook grains/etc...and let cool
  • chop some fresh green onion, sage, oregano, and mint.
  • I didn't have any "dried Persian Lime", so I used lime zest from 1 lime
  • Tablespoon or two of olive oil....and half as much lime juice.
  • Recipe calls for feta...I used blanched almonds.
  • assemble in bowl and toss with olive oil dressing. Add some salt & pepper to taste.
  • top with some chopped parley....

Good stuff....served with poached cod w/ blistered cherry tomatoes....

Perfect time of the year for this thread as coming from mostly eating soups over the winter I tend to struggle for a while making cooler food. Anyway one of my favorite summer food is a black bean burger.

Ingredients:
1 Can black beans rinsed and mashed
3/4 C oats (food processed till fine)
3/4 C walnuts/pecans (food processed till fine, not nut butter)
1 Onion (saute)
1 Red bell pepper (saute)
3 cloves garlic (saute)
2 dates (lightly saute with onion, pepper and garlic final 2 minutes)

Spices (added right before dates):
Salt
pepper
chipotle
cumin seed
coriander
mustard

Bring everything together in a bowl and make 4 patties then either bake for minutes at 425 or brown each side on a pan.

Im going to try that. My stomache is not digging morning foods, so Ima gonna try something savoury and maybe mid-morning.

I grew up in the school of three square meals a day to keep the engine running, but lately I am feeling like I could just skip breakfast altogether. Well, maybe not coffee.

Ottolenghi has done some great cookbooks. We have a few that we thumb through, drooling over the photos, then make pasta. So stupid.

Lately I've been getting prepackaged salad "kits." Super-convenient and easy to do. They're typically supposed to be 3-4 servings, but that's way optimistic. I usually eat the whole thing and control calories by limiting the amount of dressing I use (which is a huge % of the total calories).

Good thread.

I love grilling. I would like to hear some good recipes for healthy grilling stuff. We have done some all veggie meals on the grill that have been great and healthy I think.

Keep the ideas coming!

Rancho Gordo is great....introduced to them via Clif Family Winery wine club (Farm 'n Vine) where they send food with the wines...received some RG Mayocoba Beans....good stuff!

Did some garlic prawns on the grill a couple weeks ago...get some big-ass prawns (big as you can get...tiger prawns are best). I prefer shell-on, but rest of family doesn't like eating with fingers, so shell-off is OK too....

...marinate in some olive oil, 10+ cloves of garlic, paprika, salt, pepper....add a splash of sherry before tossing on the grill.

30 minutes to marinate...< 5 minutes to cook....you can cook the marinade down on the stove to make a sauce if you want.

The recipe I used said to cook on stove, but my pan was not big enough (Costco bag-o-shrimp) for all the shrimp so the extra went on grill. The grilled ones were preferred..

Sides were a tortilla espanola, caesar salad and some crusty bread. Oh, and a bottle of grenache....so, the healthy part sort of got tossed there. ;)

Here in Oregon we have Cafe Yumm and can get yumm sauce in stores, which is great on pretty much any kind of salad or bowl. We make yumm bowls pretty much every week in my house. They’re good for the kids too because they can customize based on whatever they may or may not like on any given day.

This recipe is a good approximation of the sauce. I suppose it goes without saying that these are only as healthy as the ingredients you put in them, the restaurant version has a lot of fat with cheese, sour cream, avocados, and sauce.

Tonight’s dinner, healthy bowls from various odds and ends in fridge:
  1. Base of brown rice and simple arugula side salad, (green market arugula was especilally good)
    then…
  2. Roasted zucchini and summer squash (olive oil, sea salt, red pepper flakes,Italian seasoning)
  3. Sautéed brocolli w garlic
  4. Vegan chicken sautéed then tossed w/ your favorite bbq sauce (Sweet Earth Mindful chik’n + Stubbs)
  5. Garnish w avocado slices can season w tamari and/or chile sauce if desired.
