Is it possible to downgrade an 11spd ergo to 10spd by using a 10spd index gear and ratchet ring?

Yep but unfortunately now all you can get is Centaur/Veloce shifter 'assemblies'. Shifter/guts/body-made thru 2010, not in 2011.

Part number EC-CE-100 about $100.

The part number it correct, but can you get one? AFAIK, Campy quit selling small parts and only offers major repair assemblies.

If you could get the 2010 model index disc, with more distinct clicks than the 2009 model, that would be the best option.

Ah bummer... I just bought the 2009 Centaur shifter, and was unaware of the soft feel of the shifting.

Depends of the centaur u get. One year u had to upgrade some stuff inside to change the feel of the levers. Probably old potato knows more about it because when i went to centaur I got the ultrashift one and shift pretty good.

Sure, 3 distributors I use have them. Not from Campagnolo, NA altho I have gotten hard to find things from them.

There was a running change in late 2009 to make the 10s clickier. I have 2010 Veloce shifters NIB, BTW-
