Question....can I replace my DA 9-speed shifters with a newer model 7800, 7900? If so, will I need to change out the fd too? Also, which model number allows for the cables to be under the bar tape?

7800 shifters (which still have exposed cables) work with 7700 f&r der.s.
7900 hid the cables, but requires a matching FD, (not sure about RD compatibility) plus (its been reported) they produce less than optimal braking with older model calipers, so consider setting aside some money for new brakes, too.
Bigger investment, in other words, just to hide those cables.

7800/7900 are 10s so you need a cogset and chain...probably know that. Only need a new FD for 7900 shifters. 7800, you can use the 9s FD.

Why would the newer models require a newer front derailleur? I'm using old 80s Super Record front derailleurs on several of my bikes with 9 and 10 speed cranksets and shifters, but I don't have any 7900 to test it with.

Dimension of the FD arms and no trim in 7900 LH lever makes the combo unique. Only on 7900...6700, 5700, etc can use older shimano fders. Even 10s Campag works with some shimano 10s LH levers.

The Ultegra level 6700 shifters offer the hidden cable feature like the 7900, but are fully backwards compatible with Shimano's earlier 10-speed components and many of the 9-speed components.

Hmm,

I'm using a Force FD with some 6700 shifters and it works fine. It shifts super smooth. But that isn't a 9 speed FD.
