I have a DA WH-7801 rear hub...what can I build with it if I can't get a Shimano rim? Can I mate it with any 20 hole rim? Seems it's not that easy due to the spoke configuration of this particular hub...

Would love to go grey (or silver) spoke and rim if at all possible. Recommendations for spoke and rim choices would be appreciated. Looking to keep it light, clincher and not carbon. I am a 175lb recreational rider, riding mostly rolling hills and do not race.

Not much. You would have to get spokes that were double ended and calculating spoke lengths for that hub would be a nightmare. The nipples at the hub end of the spoke are not standard so you would have to source those.

In all, I wouldn't bother unless I could rebuild the wheel as it was originally.
