Are fulcrums free hub interchangeable? In other words, would fulcrum racing 5 campy freehub work on fulcrum racing 1 that have shimano freehub?

I think your Racing 1 wheel has an oversize axle, and the Fulcrum Racing 5 and 7 use standard size axles, so they would not be compatible.

No. Need to check the axle. If it's steel(cart bearings)..freehub to freehub will work. If it's an aluminum axle, then gotta keep the freehubs the same. Remember that freehubs from Campagnolo wheels are the same. So, the axle on Racing 5 is steel, freehub won't fit onto the racing 1 but Campagnolo freehubs(for aluminum axles) will.
