I've got a wheelset, old 7 speed Campy Chorus hubs, that I'm going to convert to single speed. Did a Google search, not alot of options available, even for the 9/10/11 speed hubs. Anyone know if the 9/10/11 speed kits will work on a 7 speed? Gusset looks like a nice one, but appears to come with only 2 spacers, I'm thinking it'll be to wide too allow the sprocket and locknut.

What you need is a Campagnolo 8s cog, a handful of spacers and a lockring if the hub is a cassette hub(probably 8s also, never was a '7s' Chorus casette hub).

The splines of this hub is different than the splines of Campagnolo 9/10/11s hubs so something for those will not work on this hub. BTW-Campagnolo 8s cogsets are still made..12-23 and 13-26, I sell 'em.
