I am putting on a new force group that came with the 71 chain. I tend to replace my chains a lot to keep things ticking smooth.

Since I will be indoors all winter pedaling it seems like a waste to use anything better than the 31 chain.

Is there really any real functional difference?

No, least expensive compatible chain and cogset. They are consumables, afterall.
