Does anyone know if shimano 7700 (dura-ace, dual pivot) brakes have less clearance for wide(r) tires and fenders than the ultegra 6500 or 105 5500 version?

i just looked at a couple of my bikes, and the 7700 and 6500 look the same... but that's totally unscientific.

I've run tires as wide as 28MM with 6500 and 7700 calipers and suspect that 5500 calipers will do the same. The limiting factor otherwise will be front fork and chainstay clearances. I can't speak for fenders though.

Do the quick releases open wide enough on those brakes to properly clear inflated 28mm tires, or do you have to rely on tricks like additional cable adjusters or deflating the tire?

With wide rims it may not be needed. I’m using 1-1/4 inch tires (about 32 mm) on my Co-Motion but with wide rims. Also the reach of these brakes are listed the same but much depends on the frame and fork. If the pads are at the end of the caliper arms (as is the case with my tandem) it gives a lot more room for the taller tire to clear (assuming wider tires are taller too). On my road bikes there is no way a 32 mm tire would work with the same brake caliper.

my 7700 brakes clear 28c continental gatorskins and 28c panaracer paselas with plenty of room to spare.
it is worth noting, though, that both these tires actually measure about 26c on a caliper.
