Bacon Wrapped Sausages

1 pkg. Lil Smokies

1 pkg Bacon

brown sugar

Cut the bacon in small pieces big enough to wrap completely around sausage. Insert a toothpick to hold it together. Put these on a cookie sheet and liberally sprinkle with brown sugar. Cook in oven at 350 degrees for 30-40 minutes.

Help me narrow it down - what type of snack or meal are you seeking?

Here is my favorite lunch these days, the "garden sandwich":
2 slices seeded bread
Spread hummus on one slice, mayo on the other.
Add sliced tomatoes, sliced cucumbers, some Swiss cheese, maybe some spinach leaves. Yum.

Probably not for everyone, and ideal with vegetables that are home grown and thus have lots of flavor.

The favorite Kirk salad, consumed by us nearly every day. This is more of a winter salad, we do a different one when there are lots of fresh veggies about.

Mixed greens such as leaf lettuces, spinach, mizuna, arugula and whatever else pleases you.
Toasted pecans (take whole pecans and toast them on the stovetop in a cast iron skillet, or in the oven for just a little while)
Crumbled gorgonzola cheese
Sliced apples: Honeycrisp or Fuji or other crisp apple

House balsamic vinaigrette:
1 cup olive oil
1/3 cup balsamic vinegar
1/3 cup red wine vinegar
3/4 tsp salt
3/4 tsp ground mustard
3/4 tsp pepper
3/4 tsp garlic powder
3/4 tsp celery seeds

A summer favorite:

steamed baby corn, carrots, broccoli and spinach.

and a homemade soup with peas, tomatoes, chickpeas and spinach.

Here is one of my favorites which is a little twist on a pasta dish that has a good bite to it.

Sammi Yaki:

Combine & Marinate:
Lean steak or shrimp (chicken will work too) cut into thin strips.
Chopped Scallion
Chopped fresh garlic (however much you like)
Fresh Red Pepper (cut into match sized strips)
1/2 cup Soy Sauce (I prefer low sodium)
1/4 cup cooking sherry (red)
Let stand for at least an hour

In a separate cup combine (pepper sauce):
2 tbls cider vinegar
1 teaspoon sugar
1 teaspoon black pepper

1 or 2 cucumber, peel and cut in half. Then cut into finger thick sections (little thinner ok).

1 or 2 tomatoes (4 or 5 Roma's). cut into chunks.

Pasta:
Regular or whole wheat thin spaghetti.
You can also substitute Soba, or Buckwheat Soba noodles for regular pasta.

Cooking:
Pour a couple of tablespoons of olive oil into a wok and heat up.
Drain the excess liquid and then pour the meat mixture into the wok and stir fry until done.

Cook the pasta until done. Drain and put back into the pot.
Mix the pepper sauce into the pasta and mix thoroughly.
Then mix in the cooked meat mixture.
Then lastly, mix in the cucumber and tomatoes.

Sounds a bit different, but it's OH SO GOOD!

As a young boy, I spent every summer in western PA at my Grandmothers.

She always made chickpea salad, most items from her garden.
No wraps in those days, just her homemade buns and bread, to die for.

Must me a Pa thing LOL

That chickpea salad looks awesome!

Here are two more:

Ultimate oatmeal breakfast

Place 1/2 cup to 1 cup quick oats in a bowl
Sprinkle with:
1 sliced apple
a few raisins or dried currants
a small amount of brown sugar (less than a spoonful - the fruit adds sweetness)
pecans or walnuts
Pour milk over everything (everything in the bowl, that is)

Place in microwave for 2-ish minutes, stirring partway through.
Super hearty and warm. Will provide a nice long run of energy.

Summer cucumber salad

Slice up one cucumber per person

Simple dressing:
equal parts mayo, mustard and white vinegar
plus some celery seeds

Stir dressing into sliced cukes
Place in fridge for 1-2 hours

top with: cherry tomatoes, fresh dill

Goes great with grilled meats or freshly dug potatoes.

Boil pasta, preferably whole wheat spagetti. Go just a smidge beyond al dente. Drop it all into an olive oil coated frying pan. Crack a number of eggs on top of the pasta, mix in a little cilantro, some pepper. Splash with Frank's or some other hot sauce. It's not super flavorful, but puts gas in the tank.

Funny thing Grandma always made this also through out the summer with fresh graden cuckes. I am sure not the same receipt, I think hers had sour cream in it.Each day it stayed in the frig the better Liked it as much as the chickpea salad.

Veg , made this myself quite a few times, the heat of the pasta cooks the eggs as you toss, my version has diced garlic, minus the hot sauce, I like to grade Locatelli cheese, as far as I am concerned the cheese makes the dish.
Very flavorful. As a matter of fact I grade throughout the meal umm

I thought I would revisit this with some follow up comments.

First, I enjoyed this meal and I did eat it before my last big ride and I felt great all 70 miles, so I will be making this tomorrow night before my Sat am century. I tossed the hot peppers into the olive oil first, let is cook for a few minutes, then added the pasta.

Second, the twice cooked chicken burritos Karen suggested were really good as well. The first time I used a little too much cuman, but trimmed it back the second time and it was really good.

Third, I added something simple to my rotation, pasta, tossed with olive oil, mix in red, green, yellow peppers, skinned tomatos, some cucumber and then let stand in the pot on the stove. This is simple, nothing fancy, but the flavor was good and it ate well the rest of the week, especially cold.

Thanks and let me know if there are any other suggestions. I am planning on Williams soup/pasta dish once the weather turn a little chillier.

I make nearly the same sandwich except no cucumbers and instead of spinach I put one layer of whole basil leaves. Hummus sandwiches are great and filling.

The Kirk household winter favorite: Tamale Pie

1. Make your favorite chili recipe. Ours uses local, grass-fed ground beef, frozen tomatoes from the garden, black beans, onions, corn and spices (chili powder, cayenne pepper, cumin, cocoa, salt, garlic powder).

2. Using a large casserole dish, fill it 3/4 with chili. Top with grated cheddar cheese.

3. Spread corn bread batter on top of that. Bake at whatever temperature specified in the corn bread recipe.

Bust out a nice winter beer and enjoy. :beer:
Makes great leftovers too!

small handful walnuts
small handful golden raisins
either: a generous dollop of applesauce or a fresh apple, sliced.
Pour milk over the whole affair. Do not stir.

Microwave the whole kit and kaboodle for 2-3 minutes.
Eat while reading the Serotta forum before leaving for work. :banana:

Oh, funny! I see I already posted this recipe the last time this thread was active. Well, I am consistent at least. I see I've omitted the sugar this time, and I added the applesauce variation (largely because I have a nice stockpile of home made applesauce)

Salmon Poke

Salmon Sashimi from grocery store (like some asian market, Ranch 99 or Whole Foods)

chop up some green onions
slice the sashimi pieces in half
put in non reactive bowl
per lb salmon: 1/2 cup soy sauce, 1 tablespoon sesame oil (or more to taste)
mix up
sprinkle with crushed red pepper

Put in fridge for 2 hours

serve next to (not on) brown/white rice

I like the oatmeal recipe, delicious.

As a creature of habit, I seem to get into a rut when it comes to cooking/recipes. With finite time, kids, work, travel etc, creative meals take a back seat. For me, I am able to make one or two changes at a time. Baby steps in a positive direction, a solid attempt at not going backwards. :)

I have grown to love my morning smoothies with greek yogurt, strawberries, banana, carrots, spinach and some almonds.

In addition to the whole fruit margarita. MMMMM.

1-orange
1-lemon
1-lime
6 oz Tequilla
2oz Grand Marnier


blend and serve.

That sounds pretty good although I would try a good sausage link in place of the Lil Smokie.

I eat Fage, with olive oil, a little bit of Manuka honey and a few walnuts/almonds/brazil and/or hazelnuts
