Cyclocross (imho) really doesn't use the full capabilities of aero carbon rims...

they don't really stop well.. especially if there is dirt and grime on the braking surface..

you're usually going mid to low speed...

why do i keep seeing cyclocross bikes with these carbon wheels? what is the benefit when aluminum rims are just as light and more dependable in a race?

educate me please :)

Deeper wheel cuts through mud / sand better.

In addition, some rims like the Zipp 303 cross tubular are wider, leading to a bigger contact patch and more gluing surface for tires.

This. Especially coming back up out of the sand/mud.

the deeper rim shape also shed mud- unlike a box section, which can let mud accumulate on it's top flat section.

And a lot of Alu rims have the same stiffness to weight ratio... Cyclocross has a lot of change of pace and having that depth at a light weight makes for a nice advantage...
