Recommendation - crank & stem?

My Serotta Legend CX frame and fork have arrived. Now for the build.

Crank - is there a crank that can beused successfully for geared and single speed riding? The PMP crank has been suggested........?

Stem - what s a good stem to choose please? i prefer something elegant and svelte, not chunky and industrial.
