I can't give you details without getting home and pulling the maps but you could have a great day riding up towards Plattsburgh, taking the ferry to Vermont, riding a pass like Smugglers Notch or ApGap , then back up to the ferry and home again.
It would be a long, intense day but it sounds like that's what you're looking for......

The riding around Plattsburgh & Lk Champlain Islands is very nice. Relatively flat, with great views every way you look. Combine this with getting to & from that area from Lake Placid & you'd have quite a nice ride.
