Eric is a frequent poster here and can build you anything based on your weight and riding style. :D
Posters here also recommend Jeremy at Alchemy Wheels.

(I believe this is the correct address).

I'd go with customs from a good builder. Ultegra hubs and Open Pro rims would be good workhorse wheels for a reasonable price. Stepping up to Dura Ace would be worth it for the hubs in my opinion, but depends on your budget. The builder will steer you right toward spoke count and crossing patterns, but 32 3x would be rock solid. You could probably do 28 2x, but I would err on the side of over building and go 32 3x if it were me.

I have a bare naked Legend with red decals and black saddle, cables, etc. The new Shimano Dura-Ace 7850SL wheels go perfectly with it. This is the road tubeless clincher version that can also be used with tubed clinchers. If you have a bare titanium and bare carbon Ottrott you should give them a look.

To add to the other custom builder recommendations, I have also used Joe Young wheels and dealt several times with Lyle at Spinlitecycling.com.
Excellent work by both, and both made wheels for my Ottrott. I'm not 200 lbs but not 105 lbs either [don't MAKE me tell my exact weight! it's "somewhere in between" those two!]

But I'm 230-240 depending on the time of year and I have had great luck with Ksyriums. I have ridden the Sl3's a ton of road miles and have used a set of elites for cross and have never had an issue of any kind with either set. They are stiff but I don't find them harsh and they are pretty easy to find for a decent price. They aren't fancy or super light, but neither am I
